We have been buying Milton Monroy’s coffees every year since 2022 and in October 2025, he won first place at the Best of Tolima Auction beating 600 other entries, a testament to his continued passion and dedication to his craft.
Milton Leonardo Monroy is a coffee grower who, along with his family, has dedicated himself to producing high-quality specialty coffees using scientific and technological processes.
His farm, San Pedro, is located one hour from the capital of Tolima, in the China Canyon area, in the San Cayetano Alto rural zone at 1,800 masl. It is surrounded by mountain ranges overlooking the Tolima region, bordering Anzoátegui, the birthplace of water sources where the region's flora and fauna are protected.
This gesha first went through a natural anaerobic fermentation in 60 kg tanks for 84 hours, where each tank undergoes a special shake-up every 12 hours. After a 6-hour chilling period to eliminate excess moisture, the cherries experience a 6 to 8-hour spin in mechanical dryers to shed initial moisture. Subsequently, the beans undergo an extended drying period on raised beds in a marquesina, exposed to temperatures ranging from 18 to 31 degrees Celsius for 24 to 32 days. Following a 5-day timeout in a dark room, the beans undergo to treatment in a special small silo, ensuring the ideal moisture level before a 45-day nap in grain pro bags.
This meticulous process results in a high quality cup, reminding us of pink guava, mixed berries, apricot and lilac in the finish.
