We roast on Tuesdays.
The cherries are hand collected at the optimum maturation point, then hand-selected and floated with mountain spring water. The cherries undergo a two-step process: first, they are pre-dried whole on elevated beds in the sun for 48 hours. After this sun-drying stage, they undergo a 120-hour wet anaerobic fermentation in closed tanks, using “mosto” from the Geisha process to rehydrate the cherries and maintain flavor integrity. After the fermentation is completed, the cherries are transferred manually to the elevated beds to the final sun-dried stage for 30 days.
