
We have been working with Janson and Catur on many separate occasions and were thrilled to purchase a coffee that combines the synergistic efforts between these two amazing companies.
Janson is the first estate in Panama to process coffee with Indonesian yeast inoculants from Catur. Catur categorizes their post-harvest processed coffees into four categories, Bumi, Senja, Pucuk and Kamala.
This lot 166 Gesha was processed as a Senja, which means ‘sunset’ in Sanskrit. Just like the different colour and stages of the sunset, this taste profile is signified by a combination of deeper and complex vibrancy with an accompanying fruit sweetness and rounded body.
Senja utilises blending techniques as well as bacteria and fungi based inoculants. Combined with the unique microclimate of Janson Estate in the Chiriqui Highlands in Volcan, Panama, this coffee exhibits sweet and juicy characteristics, reminiscent of
