Finca El Vergel is one of the oldest single estates in Tolima, Colombia, run by first generation producers, brothers Elias and Shady Bayter. We have visited El Vergel three times over the past years and are impressed with their commitment to quality year on year.
This Gesha undergoes a double fermentation process, immersed in anaerobic mucilage for 140 hours, enhancing floral and citric notes. Following this, it went through an 18-day sun exposure and dried with tangerine peels. Next, it undergoes a 25-day stabilization period post-sun soak before being milled.
When we cupped this coffee at El Vergel in October 2023, we were blown way by its unique flavors and high clarity. We hope that this coffee will be a memorable one for you, just as it is for ourselves.
