Creativa Coffee District is a specialty coffee producer that creates a community with coffee growers by buying their coffee cherries and uses state-of-the-art facilities and innovative processing methods in order to push the limits and guarantee exceptional coffee profiles for Panama coffees, while being committed to sustainable practices and guarantee higher incomes for growers.
This microlot no. 52 is from Stefan Muller. Stefan Muller has been running Hacienda Bajo Mono for six years, having bought the farm through his father-in-law, Don Benjamin de Dianous. Stefan and his wife have built the property from almost nothing. The coffee grows under the shade of many additional trees, including avocado, chirimoya, and orange.
Stefan is working on creating his own fertilizer, using the coffee pulp as a principal ingredient. He employs seven people year round, and has developed a robust training program to ensure the highest quality of coffee.
This particular lot was sent to C.C.D to be processed using the Static Cherry method. This method involves sealing the cherries in plastic tanks to create an anaerobic environment, allowing the bacteria and yeast to develop at a much slower rate. The relatively short fermentation time lends a mellow vibrancy to the profile, due to the prevalence of lactic acids in the cherry.
