The Lamastus family has been producing coffee for four generations in Boquete, Panama, since 1918. Their coffees are grown in three different farms: El Burro Estate, Luito Geisha Estates, and Elida Estate.

The coffees from El Burro Estate grow under some of the most favorable conditions. The coffee trees are surrounded by virgin-native cloudy rain forest and are grown in rich young volcanic soils. The temperatures are low especially at night, resulting in trees that take 4.5 to 5.5 years to start producing. This duration is 2 or 3 years longer to produce than average coffee trees. The low temperatures also extend the ripening time by 1 month longer than usual. All these unique growing conditions at El Burro result in coffees of exceptional quality.

For this natural processed gesha, whole coffee cherries first undergo a 6-day anaerobic fermentation in the tank. After that, the coffee cherries were taken to drying beds for a slow drying of more than 30 days. The concentrated liquid or fruit juice being produced during the anaerobic fermentation containing natural yeasts, microorganisms and bacterias will later be used for other processes.
